- Like many of the pre-Prohibition stalwarts, the Clover Club was rediscovered, and is rightfully considered a classic, with the combination of egg whites, raspberry syrup and fresh raspberries making for a delightfully fruity treat.
- INGREDIENTS
- 60mL (2oz) Lyre’s Dry London Spirit
- 10mL (0.25oz) premium raspberry syrup
- 30mL (1oz) lemon juice
- 10mL (0.25oz) egg whites
- 5mL white sugar syrup (1:1)
- 4 fresh raspberries
- Method: Dry shake, fill shake with ice. Shake hard briefly, fine strain.
- Glassware: Cocktail coupette
